Creamy Broccoli Soup


1 big broccoli head

1 big potatoe

a medium onion

100 gram blue cheese

a cube of vegetable stock

olive oil

Cook an onion in  a deep pan for 5 minutes. Add 1 litre veg. stock and cubed potato. Cook under cover for 10-14 minutes until the potato softens. For just 3 minutes add broccoli – it gets cooked very quickly and it looses its colour. Add crumbles of blue cheese and let it melt. Use a blender to get  creamy texture. I love this soup.
