15 min Spinach Pasta

Standard

175 g short pasta

1 pack of fresh spinach

1 can anchovies

zest from 1 lemon

1 garlic clove

170 g plain yogurt (or creme fraiche)

olive oil

 

Cook pasta al dente. Heat 2 tablespoons olive oil on a frying pan and add crushed garlic clove and anchovies. Cool on a low heat until the fish is melted. Add spinach and lemon and cook for approx 3 minutes until spinach softens. Add cooked pasta and yogurt or creme fraiche. Voila!

 

Calorie Count: 350-400 calories per serving counted 3 servings from the above counted plain yogurt 0% instead of creme fraiche.
